Pecan Pie Bars

Ingredients:

Shortbread Crust:

3 tablespoons coconut oil

3 tablespoons maple syrup

1 teaspoon pink Himalayan salt

1 teaspoon vanilla extract

1.5 cups almond flour

Pecan Pie Filling:

3 tablespoons maple syrup

1.5 cups chopped pecans

1 teaspoon pink Himalayan salt

Directions:

  1. Pre-heat oven to 350 degrees.

  2. Mix shortbread crust ingredients in a bowl.

  3. Transfer shortbread crust into an 8x8” glass pan.

  4. Bake for 10-20 minutes, until a little golden on edges.

  5. Pour maple syrup in a frying pan over medium heat.

  6. Wait for maple syrup to begin bubbling

  7. Add in pecans and salt

  8. Pour the candied pecans onto the shortbread crust

  9. Bake for 5-15 minutes, waiting for edges of crust to be completely golden

  10. Cool before eating; it’s so yummy when the maple-syrup-pecans caramelize and harden
